Latkes

Apple Latkes for the Jewish Holiday of Hanukkah
Ingredients: 
5 medium potatoes, grated and squeezed dry
1 small onion, grated
5 eggs, slightly beaten
salt and pepper to taste
1/2 cup cooking oil
applesauce or sour cream
Directions: 
  1. Combine grated potato, onion, eggs, salt and pepper.
  2. Shape mixture into patties, about 3 inches in diameter.
  3. Fry patties in hot cooking oil until golden brown on both sides.
  4. Drain on paper towels.
  5. Serve hot with applesauce or sour cream.
