Three-Tone Latkes
Peel potatoes. Grate potatoes and zucchini and set in colander to drain while you grate the onion.
2 large potatoes
1 large sweet potato
1 medium zucchini
1 medium onion
2 eggs
1/2 teaspoon salt (or to taste)
1 shake of pepper
1/4 cup matzah meal
Famie's Classic Latkes
This classic recipe for potato pancakes includes Idaho potatoes, onions, matzah meal, egg, and a little bit of chopped parsley.
1 Idaho potato
1 egg
1/2 cup onion, diced
1/2 cup flat leaf parsley, chopped
1/4 cup matzah meal or flour
salt and pepper to taste
Cranberry Pear Sauce
This is not your traditional applesauce. For one, it calls for pears. And second, this fruit concoction is cooked in a good amount of honey. It takes just a few minutes to prepare. Serve it warm or cold, latkes or as a stand-alone side dish.
1 cup water
1/2 cup white sugar
3 pears, peeled and diced
1 (12-ounce) package fresh or frozen cranberries
1 cup honey
1 teaspoon cinnamon
1 tablespoon fresh lemon juice
Zest from 1/2 lemon
Corn Patties

2 cans of corn, drained (I used 2 11-oz cans of Niblets)
2 eggs, beaten
3/4 cup flour
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon black pepper
Oil for frying
