Jewish Views on Economic Justice
The Torah does not just command us to give to the poor but to advocate on their behalf. We are told in Proverbs 31:9 to “speak up, judge righteously, champion the poor and the needy.”
Ask Tina: What is a Pogach?
Q: I have a memory of my aunt bringing an individual serving of a dome-shaped pastry from a Bronx, New York bakery when she came to visit. It had a buttery taste and could be toasted in a toaster oven. My aunt's family is from the Ukraine, but I think the pastry may have Rumanian roots.
Ask Tina: How far ahead can I make a 3-color gefilte loaf?
Q: Tomorrow I am planning on making your recipe for tri-colored gefilte loaf that appeared in the Spring 2012 edition of Reform Judaism magazine. What is the maximum amount of time that it can sit in the refrigerator?
Ask Tina: Can I freeze a Passover Linzer Torte?
Q: I make your Passover Linzer Torte each year ever since I saw it in Reform Judaism magazine in 2005. I wanted to know if I could bake it in advance and freeze it, in the pan (I’ll be traveling with it), and defrost it in the pan the day of the seder while traveling. What do you think?
Ask Tina: Can you advise me on cooking with a Tagine?
Q: I was very happy to find your Lamb Tagine Passover recipe. I bought a Tagine a few years ago, but I've been too intimidated to use it. I am hosting a seder for 12, and one guest likes lamb and not chicken, so I am going to be brave and add your lamb recipe to the menu.
Ask Tina: Adding garlic?
Q: What is the best way to add garlic to a dish? A: Garlic Guidlines: Raw garlic, when added to a marinade can be added chopped or smashed with peel removed. Whole garlic cloves will not impart a strong flavor if the interior of the clove is not exposed to the liquid.
Ask Tina: Do egg whites seal dough edges better than water?
Q: When frying a pastry packet, why should I seal dough edges together with egg white instead of water?
Ask Tina: Is there a better way to drain fried foods?
Q: How can I effectively drain fried food on paper towels without using half a roll of paper towels? A: Even if you put down 20 sheets of paper, a small piece of fried food will soak oil all the way to the bottom of the stack.
Ask Tina: Can I substitute fillets for whole fish when I cook gefilte fish?
Q: I am thinking about making your gefilte fish recipe for Rosh HaShanah. I have made it in the past so I am not gun shy about using the whole fish. But, if I can locate the fish, I may decide to use fillets. Your recipe calls for 4 pounds of whole fish.
