Hamantaschen Mohn (Poppy Seed) Filling

Poppy seeds are often used in Purim confections. Aside from their widespread popularity in Eastern Europe and the Middle East, they are symbolic of the many lots cast by Haman and the promise God made to Abraham to spread his seed throughout the world, the very antithesis of the annihilation Haman planned. If you've ever dropped a spoonful of poppy seeds, then you know how quickly they disperse! Poppy seed filling is called mohn in Yiddish. Mohn-filled triangle cookies were very popular in medieval Central Europe.

1 cup ground poppy seeds (about 4 ounces)
1/4 cup sugar
1/3 cup honey
Grated zest of 1/2 lemon
2/3 cup raisins
1 teaspoon vanilla
1/2 cup finely chopped walnuts
  1. Place the poppy seeds in a 1-quart bowl, and pour boiling water over to 1 inch above the seeds. Set aside for 15 minutes and drain thoroughly.
  2. Place the poppy seeds, sugar, honey, lemon zest, raisins, and vanilla in a processor work bowl. Process until well ground.
  3. Transfer the mixture to a bowl and fold in the finely chopped walnuts. Cover and refrigerate until ready to use.
